01 2021 Czapleski Ranch Cabernet bottle

2021Czapleski Ranch Cabernet

Two acres on the valley floor, dry-farmed since 1962. Concentrated dark fruit with a savory, herbal edge — the kind of Napa Cabernet that drinks like it's from somewhere quieter than the address suggests.

Aging22 months in French oak
Production180 cases
PairingRibeye · Game · Aged cheddar
Drink2026 — 2034
$128 per bottle
02 2021 Bull Dog Vineyards Cabernet bottle

2021Bull Dog Vineyards Cabernet

Hillside fruit from the eastern Vaca range — more iron and structure than the valley floor wines. Built for the long slow uncork; the first hour and the third taste different bottles.

Aging24 months in French oak

PairingLamb · Mushroom · Hard cheese
Drink2027 — 2038
$135 per bottle
03 2019 Napa Valley Cabernet bottle

2019Napa Valley Cabernet

The blender's wine — sites across the valley, brought together to honor the vintage. 2019 was a slow, even year; this is the wine that shows what happens when Napa is left alone to do what it does.

04 2021 Blanc de Blancs bottle

2021Blanc de Blancs

Chardonnay grown for sparkling — picked early, kept honest. Méthode champenoise, two years on the lees, dosage at the lowest end of brut. A wine that wakes a table up without announcing itself.

05 2021 Cuvée Blanc bottle

2021Cuvée Blanc

A still white field blend — Marsanne, Roussanne, a thread of Viognier — fermented in neutral oak. Round and pollen-bright, the kind of bottle that surprises you in November when you forgot what whites can do.

Aging10 months in neutral oak
Production120 cases

06 2023 Beckstoffer Carneros Chardonnay bottle

2023Beckstoffer Carneros Chardonnay

Carneros fruit from the Beckstoffer family's home block — cooler, marine-influenced, picked at acidity rather than ripeness. Spends a year in 30% new French oak, comes out tasting like the bay air it grew next to.

B. True Wines cellar and winemaking story
The Maker

B. True Wines.

Bill True · Brian Graham · Napa Valley & Sonoma County

Some wineries begin with land. B. True began with a friendship. What started as a shared appreciation for great wine between Bill True and winemaker Brian Graham evolved into a label dedicated to one simple idea: exceptional vineyards deserve exceptional stewardship.

Rather than building a large production winery, the pair chose a different path. They seek out remarkable vineyard sites throughout Napa Valley and Sonoma County, working with growers they trust and producing wines in limited quantities that showcase the character of each vineyard rather than the influence of a house style.

Brian's winemaking journey has taken him from Bordeaux and Burgundy to some of California's most respected cellars, bringing a global perspective to every bottle. Bill's background in chemistry and sensory science provides an uncommon attention to balance, texture, and detail.

What drew Reserves & Rarities to B. True is not simply the quality of the wines, but the philosophy behind them. Small lots. Exceptional fruit. No shortcuts. Every bottle feels intentional, and every vintage reflects the people, places, and patience required to create something truly memorable.
